    Grande Provence Méthode Cap Classique Brut Reserve

     A classic and elegant Chardonnay and Pinot Noir blend, rich and complex.   AREA OF ORIGIN Franschhoek   VINTAGE 2011   ANALYSIS Alc 11.5 % Ph  3.47 RS 3.3 g/l   VINIFICATION The grapes used to craft this effervescent wine were handpicked from specially selected Pinot Noir and Chardonnay blocks in the Franschhoek valley.  The juice was cold fermented and aged for 6 months before it was sealed in the bottle for the second fermentation process. Maturation on the lees for 5 years took place to develop richness.   STYLE This bottle fermented blend in equal components of Pinot Noir and Chardonnay is aged “sur lie” for 5 years before disgorgement with zero dosage, resulting in a complex, rich leesy sparkling wine with a crisp palate. Notes of baked apples, biscotti, brioche and a hint of pears are supported by the delicate bubbles.   SERVING SUGGESTION  Enjoy this rich and complex sparkling wine with fresh west coast oysters, plump ripe strawberries or to celebrate life.

    Grande Provence Méthode Cap Classique Rosé NV

    AREA OF ORIGIN - Stellenbosch   VINTAGE - NV   ANALYSIS Alc 12.23 % pH  3.16 RS 7.88 g/l TA 6.34 g/l   VINIFICATION Whole bunches are deposited directly in the press and very gently pressed according to the traditional Champagne method. The pale salmon colour is achieved by adding about 2% of specially prepared Pinotage grapes. The secondary fermentation takes 6 weeks in which the bottle will produce the fine bubbles. The sparkling wine is then matured in contact with the lees for 15 months.   STYLE Vibrant strawberry flavour bursts forth with lively and delicate bubbles. The richly textured flavours of Pinot Noir combined with the elegant structure of Chardonnay lend complexity. This MCC Rosé is bursting with red berry flavors supported by a long finish.   SERVING SUGGESTION: Smoked salmon trout, strawberries, sashimi, fruit based desserts and dark chocolate
